Are character traits fixed or can the individual work to change them?

They're fixed with a few exceptions (illness, injured, wounded, stressed).
A couple can be added after adulthood - kinslayer and bloodthirsty.
Most are obtained at age 7 or 18.

Okay I can live with that but some do seem a bit of a strange mix as a few of my characters have traits that in some cases would cancel out certain aspects of said traits. For example Generous has as one of its aspects +2 Influence and Coward has -2 Influence. Would characters have traits that conflict in this manner?

Every virtue has a corresponding vice. A character who develops one loses the opposite.
Examples:
1) A character develops Lazy as a child but upon adulthood earns the Industrious trait. He would lose the Lazy trait as a result.
2) A character develops the Modest trait as a child but upon adulthood earns the Proud trait. She would lose the Modest trait as a result.
However, in terms of underlying modifiers, traits may compliment, conflict and offer contradictory benefits making interesting personalities that may have stats that are not optimal.
A child that has the Valorous virtue and develops the Modest virtue upon adulthood, won't bring any additional glory to your house but will be better at petitioning others through her influence.
That Wise child may have seemed perfect for the clergy until he developed Lustful but at least you can be sure of continuing the family line.
And so on.

Regarding the Trait at 18 - if a character is an apprentice, does who the person they are apprentice to have any influence on the traits they develop?....that is, you send them to a valarous Lord who will hopefully be a positive role model?

Traits are part luck and part genetic. They're not taught. What you learn from your master during an apprenticeship is a skill.
Think of it this way: A Knight may be Valarous but his squire still a coward. The Knights example doesn't change the underlying fearfulness of his squire - those are his inheritance from his parents. Likewise, an Industrious lord may only despair at his Lazy ward. But both the Knight and the Lord can impart some knowledge in their respective fields to their unworthy charges.

I've also noticed that some of my characters have traits not listed in the rules.
For Example: Steadfast and Tongue Tied.

They're not traits as such. They are descriptions of your character based on their characteristics. Steadfast means your character is completely loyal to his liege. Tongue Tied means it has a negative influence. There are more descriptors to be discovered and their effects guessed at Actual traits are listed on the "Members" of your house table.
